Assistant Pastry Chef (full-time, part-time)

The Assistant Pastry Chef needs to meet the daily production goals for baked goods. That means preparing the dough, letting it bulk ferment, shaping/proofing/baking it, and finally garnishing them. The Assistant Pastry Chef will produce according to recipes provided and will ensure that the products produced in the bakery meet our quality standards while maintaining a clean and sanitary food area.

Responsibilities 

  • Follow production schedule to make and bake the variety and quantity of goods needed
  • Measure ingredients to mix croissant/brioche dough and cake batter according to recipes
  • Laminate dough using automatic sheeter
  • Roll, cut, and shape dough to form different viennoiserie pastries, breads, and related products timely and efficiently
  • Cut, peel, and prepare fruit/nuts for pastry fillings
  • Mix icings and other toppings to decorate pastries
  • Use a variety of kitchen tools, including electric mixers, blenders, cutting tools, rolling pins, and pots/pans
  • Bake all pastries/breads to specification and establish a high standard of product quality
  • Troubleshoot variables that can affect the production process
  • Maintain safe, clean and good working order of production areas and equipment
  • Maintain clear and open communication with packing and sales teams
  • Assist with training of new members on all aspects of production
  • Handle and restock ingredients, tools, and cooking pans

Knowledge, Skills, & Abilities

  • High school diploma or equivalent.
  • Minimum 2 years of experience in viennoiserie pastries and confectionary related production
  • Familiar with mise en place, mixing, locking in and sheeting of multiple types of laminated doughs, plus other product prep.
  • Be passionate about the food industry with a strong interest in high quality products
  • Strong organizational and decision-making skill, along with the ability to recognize what needs to be prioritized
  • Ability to work a flexible schedule including nights, weekends, and holidays as needed

Lead Artisan Bread Baker – Night Shift (full-time)

Our lead artisan bread baker should be experienced with mixing doughs, sourdough breads, and working with various grains. In addition to baker's technical skill, we look for a person who can lead the bread department and work alongside our pastry department. We’re looking for a dedicated individual with bread baking experience for our night shift.

Responsibilities 

  • Completes and oversees completion of daily production: French breads, pain de mie, brioche, as well as Artisan breads.
  • Be an active and participating member in daily operations of the team; create great morale and set a positive mood.
  • Monitor loss and spoilage, and maximize profitability within food cost guidelines.
  • Prepare base ingredients for daily production of bakery items.
  • Set professional standards for consistency and excellence of production and adhere to company standards and policies; monitor performance of staff and hold accountability to company expectations.
  • Write the weekly schedule for the bakery department to be approved by manager; organize the schedule and daily production accordingly to the bakers’ skills.
  • Determine the number of staff needed to fulfill the production on daily basis, and work with manager to ensure that the headcount is filled with the right people.
  • Maintain all machinery; communicate with the bakery manager and store leadership.
  • Follow and comply with established procedures, including, health and sanitation, and adhere to safe work practices.
  • Attend a weekly meeting with team members and discuss all subjects as needed: ordering, performance/employee issues, bread of the month recipe ideas, etc.
  • Share all ideas and recipes with bakery manager before experimenting at the bakery, and hold staff to the same standards.

Knowledge, Skills, & Abilities

  • Extensive knowledge of French Bread Baking procedures preferred.
  • Capable of teaching others in a constructive and positive manner.
  • Minimum 3 to 4 year of bread baking experience or equivalent.
  • Ability to communicate effectively with customers and team members.
  • Ability to operate all necessary equipment.
  • Basic computer skills.
  • Able to delegate responsibilities.
  • Available for flexible scheduling to meet the needs of the department. Knowledge of and passion for the food industry, with a strong interest in food and high quality products; desire to learn and grow in his or her knowledge.
  • Strong organizational and decision-making skills, along with the ability to recognize what needs to be prioritized and when.
  • Servsafe certification is a plus but not required
  • Ability to work a flexible schedule including nights, weekends, and holidays as needed

Pastry Chef

We are looking for an experienced Pastry Chef to join our pastry team in preparation of pastries, viennoiseries, tarts and sweets production. Your skills in baking high quality treats should be matched by your creativity to develop new amazing tastes and recipes. The ideal candidate will be well-versed in culinary arts with a passion for sweet and delicious creations. They must adhere to health and safety standards to provide clients with the best possible serving.

Responsibilities 

  • Prepare a wide variety of baked goods such as croissants, tarts, cakes, cupcakes, breads, pies, cookies and other pastries as necessary to meet daily requirements.
  • Create new and exciting desserts to renew our menus and engage the interest of customers
  • Monitor stocks for baking ingredients such as flour, sugar etc. and make appropriate orders within budget
  • Guide and motivate pastry assistants and bakers to work more efficiently
  • Identify staffing needs and help recruit and train personnel
  • Maintain a lean and orderly cooking station and adhere to health and safety standards

Knowledge, Skills, & Abilities

  • Proven experience as Pastry Chef, Pastry degree or relevant role preferred
  • Experience in French Pastry is necessary
  • Great attention to detail and creativity for preparation of all desserts needed for pastry production
  • General understand of proper pastry methods, techniques and standards
  • In depth knowledge of sanitation principles, food preparation and baking techniques
  • Must be able to work a shift of 8-10 hours a day
  • Be able to work in a team environment
  • Ability to communicate effectively with associates/management, clients and vendors when necessary
  • Able to work flexible schedule to accommodate business levels
  • Able to mathematically adjust recipes; able to read, create, interpret and follow written recipes with precision
  • Servsafe certification is a plus but not required
  • Ability to work a flexible schedule including nights, weekends, and holidays as needed

Bakery Assistant - Night Shift/Day Shift (full-time, part-time)

The bakery assistant will help the lead baker and pastry chef prepare all items for the day and will prepare more when we are low on product so that we may keep the bakery case full.

The goal is to enhance customer satisfaction so that we can maintain and expand our clientele.

Responsibilities 

  • Regularly restock all kitchen supplies and food items required for service.
  • Assist Pastry Chef and Assistant Head Baker by controlling food and labor cost, as well as purchasing, receiving, purveyor lists and inventory of all kitchen items.
  • Maintain an exceptional production knowledge and attention to detail with decoration and taste quality.
  • Maintain a solid knowledge of all food products and skillfully apply culinary techniques.
  • Ensure all products are rotating on a first-in, first-out (FIFO) philosophy.
  • Properly label and date all products to ensure safekeeping and sanitation.
  • Read, measure, and execute recipes.
  • Work as a team, assisting all guests’ and employee’s needs and inquiries.
  • Effectively communicate with management and service staff in order to fulfill and address any issues or needs requested by guests and or other employees.
  • Ensure kitchen equipment is property maintained and functioning.
  • Performs all other job related duties as requested.
  • Maintain a lean and orderly cooking station and adhere to health and safety standards

Knowledge, Skills, & Abilities

  • High school diploma or equivalent.
  • At least 1 year of baking artisan bread/pastry experience.
  • Working knowledge of equipment to include, but not limited to a slicing machine, mixer, sheeter, dough divider and small ware equipment.
  • Working knowledge of health, safety and sanitation procedures.
  • Working knowledge of weights, measures and various baking and preparation techniques.
  • Professional appearance and demeanor.
  • Be able to work in a team environment
  • Ability to follow a production schedule and prioritize tasks
  • Ability to follow recipes, directions, and established procedures
  • Ability to work a flexible schedule including nights, weekends, and holidays as needed
